Ben’s Select Cabernet Sauvignon 2014 Chile Kosher
This very young unfiltered 2014 wine was produced here in Brooklyn, NY from grapes grown in Curico, Chile. After destemming and crushing (brix at 26) they underwent a cold soak maceration. We added premium yeast, nutrients and toasted oak chips during the primary fermentation. The cap was continuously punched down in order to maintain an optimal temperature and the extraction of the desired level of tannins. Once dry (<0.1 residual sugar) they were gently pressed. The wine was inoculated and immediately underwent a malolactic fermentation. Oak and sulfites were added. The wine was racked and bottled. Enjoy!
